Every ingredient that enters our kitchen has a direct link with the territory. We work daily with local suppliers who share our love for ethical and genuine production. Cheese comes from small Tuscan dairies, cured meats are made according to ancient peasant recipes and vegetables are grown without force, following the natural rhythm of the earth. Our fresh pasta, made by hand every day, is made with local flours that have been carefully selected not only for their taste but also for their health benefits.
